Are you insured and licensed?

Yes Mon! 

CK Jerk Shack is a fully insured and licensed mobile restaurant/caterer.  We are also Serv-safe certified and are current with food handling and sanitation guideline requirements.  In addition Mon, me mother train me right.

 


What is the maximum and minimum order size?

As a custom caterer we only operate on days that it is cost-effective to do so, as we custom shop, prep and cook for each order.    As such, we typically have a $1,000 food order minimum; approximately 40 guests @ $25 pp or 100 guests @ $10 pp.  Occasionally, we accept smaller orders that can be combined with another order that day or small gatherings with a high service fee component, e.g., a once-in-a-lifetime feast for 2.   There are no minimums if you pre-ordering from us for pick-up when we are vending at a public event like a Farmers' Market or Food Truck Bazaar.

 


Are my transactions secure?

All transactions are secured by 128 bit SSL encryption.  Look for the "s" for secure in the URL (https://) in the URL and the security lock on your browser.   CK Jerk® Shack uses PayPal for all online transactions. With more than 78 million member accounts in over 56 countries worldwide, PayPal is the world's largest online payment service.  PayPal makes sending money as easy as sending email.  Any PayPal member can instantly and securely send money to anyone in the U.S. with an email address. 

 

PayPal uses 128 bit SSL technology to keep your information safe. In addition, when you send a payment using PayPal, CK Jerk Shack does not receive sensitive financial information like your credit card or bank account number.


What is Jerk?

Jerk is a Caribbean style of BBQ that originated in Jamaica and refers to the process of spicing/seasoning/marinating and grilling/barbecuing/smoking meats, poultry, seafood, and even vegetables. The resulting food yields a spicy-sweet flavor. Jerk is also used as a noun when describing the dry or wet seasoning mix/rub used to season and marinate a particular food.  The three main ingredients of Jerk are Scotch bonnet chili pepper, a variety of the habanero, allspice (pimento) berries, and thyme. Other ingredients may include cinnamon, ginger, cloves, garlic, onions, and sugar depending on the chef.


How is your Jerk different than authentic Jamaican Jerk that I've tried in Jamaica?

The primary difference is our meat quality and cuts used, cooked meat tenderness and the heat quotient.  Rather than cook our meat directly over a charcoal fire, we cook our meat on a rotisserie smoker with a fire in the rear.  The biggest benefit of this approach is our meat is as tender as traditional low and slow cooked Southern BBQ, but with a nice caramelized crust on the pork and brown crispy skin on the chicken.  For those that love the char jerk chicken skin, we can put the smoked chicken on our charcoal grill for a minute or two, but this isn't recommended.

 

We also use authentic Jamaican jerk seasonings as our wet rub, but dial the heat down a bit, so that you can really taste the great flavor of the wood, the meat, the herbs and spices.  You can easily add heat with a scotch bonnet pepper sauce.

 

We do not par-boil our meats and you won't find pork skin with hair at CK Jerk Shack. 


How is Jerk different than traditional BBQ?

Flavor, flavor, flavor! Both produce tender meat with a great smoked flavor, but jerk really kicks up the flavor profile with the use of unique blend of peppers, herbs and spices.  The jerk spices also help to tenderize the meat.


How hot and spicy is Jerk?

The hotness and flavors vary greatly from establishment to establishment and is a function of the amount of Scotch bonnet pepper used in the jerk rub, how much jerk seasoning is used and how long the food is marinated for. 

 

At CK Jerk Shack we produce Oak-Smoked Jerk with a focus on flavor, not heat, because you can always add heat to taste, but you can't take it away.   This linked joke will give you an idea of the diversity of jerk cuisine on the market.   CK Jerk Shack is more like "Plate #8".  Our heat and spice quotient is just right!   With advance ordering, catering customers can request their jerk extra spicy, if they like it really hot.  We also have a Jamaican Hot Sauce for those that like it extra hot.


Is BBQ sauce really optional?

Yes Mon! 

CK jerk is so tender, flavorful and pretty that we don't sell it with sauce. For those of you that need sauce out of habit or to cut down the heat, you couldn't ask for a better sauce, but please try our jerk without sauce first.  Our secret recipe BBQ sauce is guava flavored and tomato based and custom designed to compliment the jerk flavors.  Kids tell me it goes great with chicken nuggets too.


Can you serve alcoholic beverages?

Yes and No Mon! 

CK Jerk Shack does not have a liquor license and can not sell you or provide alcoholic beverages.  However, we can provide bartender services for client supplied alcohol, e.g., residential parties.  For venues that require a liquor license or events that require a full bar, CK Jerk Shack partners with a bar service provider to meet your alcoholic beverage needs. 

 

We do supply a wicked Jamaican Rum Punch Mix though.  All you have to do is add the Jamaican White Rum and ice, Mon!
