CK Jerk Shack offers an extensive array of meats, seafood and vegetables cooked over charcoal and hardwood in a wide range of BBQ styles, from Jamaican, American, Hawaiian, Asian, Cuban, to our specialty award-winning Island BBQ.  All are guaranteed to delight, no matter the budget, ethnicity or discriminating palate.    So please make your selection from our custom or set menus below.

 Grilled and BBQ Flavor Options

Jerk:  CK Jerk Shack's specialty and by far the best flavor profile for most menu items.  Meats are slow-seasoned with CK's signature wet Jamaican jerk rub and then smoked in the Jerk Pit rotisserie smoker.  Combines the best of traditional Southern wood-smoked bbq and authentic Jamaican jerk bbq to create tender bbq with a great smoke-ring and a complex herb, spice and smoke flavor that fires-up your taste buds, without the traditional "burn" of jerk, i.e., you'll experience a carnival of flavors, rather than a volcano of fire.  For those that like it hot, we can easily increase the hot peppers used.  Click here for more information about Jerk Cuisine.

 

Tropical: Meats are marinated in a  mango vinaigrette marinade with garlic, onions and other spices, and then smoked.  Resulting food has a smoky, sweet and tangy flavor with a tender texture.

 

American (Southern BBQ):  Meats are seasoned with our a hickory bbq dry rub and then smoked.  Resulting food has smoked flavor and a tender texture.

 

Spanish Mojo (Cuban/Puerto Rican BBQ).  Meats are marinated in a  tangy citrus mojo criollo marinade with garlic, onions and other spices, and then smoked.  Resulting food has a smoky, tangy flavor and a tender texture.

 

Hawaiian: Kalua Pork is seasoned with a special salt, partially wrapped in banana leaves and then slow-roasted in the rotisserie smoker.  Resulting food has a mild smoky flavor and tender texture. 

 

Herb-Roasted: Meats are seasoned in a secret blend of herbs and spices, including rosemary and thyme and then smoked in the rotisserie smoker.  Resulting food is mild with a great smoky herb flavor and a tender texture.

 

Natural: Meats are seasoned with kosher salt and black pepper, and then grilled/smoked on our wood/charcoal grill or smoker to bring out their natural flavors.

 

Curry-Coconut (Asian BBQ):  Meats are marinated in CK's secret recipe curry-coconut marinade, and then grilled on the wood/charcoal grill.  Resulting food has such a great curry-coconut flavor that the peanut sauce is optional. (A Caribbean twist on Thai or Malaysian satay.)

Includes 1 pound of steamed Old Bay, Jerk or CK's Pepper  peel n' eat shrimp cooked onsite.

Includes oak-roasted 1 pound whole jerk snapper, stuffed with callaloo greens, Jamaican hardo bread.

#9 - Vegan Fest  $11.00:

Please Note:  All the above prices are per person (pp) for food only, and includes the selected items packaged in full-sized aluminum food pans, our secret recipe guava bbq sauce, premium paper plates, bowls, cups, napkins and utensils, as necessary.  Pricing does not include gratuity, delivery, servers, equipment rentals or sales tax, etc.  There is also a per person up-charge (+$) or down-charge (-$) for select menu items as indicated below.  Minimum quantities apply, and pricing for less than 75 guests will be slightly higher.
