Are you insured and licensed? Yes Mon! CK Jerk Shack is a fully insured and licensed mobile restaurant/caterer. We are also Serv-safe certified and are current with food handling and sanitation guideline requirements. Can you serve alcoholic beverages? Yes and No Mon! CK Jerk Shack does not have a liquor license and can not sell you or provide alcoholic beverages. However, we can provide bartender services for client supplied alcohol, e.g., residential parties. For venues that require a liquor license or events that require a full bar, CK Jerk Shack partners with Bar Fly bar catering service to meet your alcoholic beverage needs.
We do supply a wicked Jamaican Rum Punch Mix though. All you have to do is add the Rum and ice, Mon! Are my transactions secure?

What is Jerk?Jerk is a Caribbean style of BBQ that originated in Jamaica and refers to the process of spicing/seasoning/marinating and grilling/barbecuing/smoking meats, poultry, seafood, and even vegetables. The resulting food yields a spicy-sweet flavor and a tender texture. Jerk is also used as a noun when describing the dry or wet seasoning mix/rub used to season and marinate a particular food. The three main ingredients of Jerk are Scotch bonnet chili pepper, a variety of the habanero, allspice (pimento) berries, and thyme. Other ingredients may include cinnamon, ginger, cloves, garlic, onions, and sugar depending on the chef. How is Jerk different than traditional BBQ?Flavor, flavor, flavor! Both produce tender meat with a great smoked flavor, but jerk really kicks up the flavor profile with the use of unique blend of peppers, herbs and spices. The jerk spices also help to tenderize the meat. How hot and spicy is Jerk?Our heat and spice quotient is just right! With advance ordering, catering customers can request their jerk extra spicy, if they like it really hot. We also have a Jamaican Hot Sauce for those that like it extra hot.
The hotness and flavors vary greatly from establishment to establishment and is a function of the amount of Scotch bonnet pepper used in the jerk, how much jerk seasoning is used and how long the food is marinated for. CK Jerk Shack is more like "Plate #8". Is BBQ sauce really optional?Yes Mon! CK jerk is so tender, flavorful and pretty that we don't sell it with sauce. For those of you that need sauce out of habit or to cut down the heat, you couldn't ask for a better sauce, but please try our jerk without sauce first. Our secret recipe BBQ sauce is guava flavored and tomato based and custom designed to compliment the jerk flavors. Kids tell me it goes great with chicken nuggets too. What is the maximum and minimum order size?Our minimum order is based on the fact that we custom prepare all orders and only operate when it is cost-effective to do so. As such, we typically have a 20 servings-per-item minimum and $500 order minimum. Occasionally, we accept smaller orders that can be combined with a large order that day or small gatherings with a high service fee component, e.g., a once-in-a-lifetime feast for 2. We can easily handle events for 1,000-2,000 people with our own equipment. For larger events we rent additional equipment to handle the production demand. The great thing about a good smoker is BBQ prepared in bulk taste the same as BBQ prepared for one. |
